Italian Stir-Fried Lamb

Italian Stir-Fried Lamb

4 servings
Preparation time: 15 minutes
Cook time: 10 minutes

Ingredients:

  • 3/4 cup chicken broth
  • 1/4 cup dry white wine or water
  • 2 Tbs. prepared pesto
  • 4 tsp. cornstarch
  • 1/2 tsp. dried oregano leaves, crushed
  • 1 Tbs. peanut oil
  • 1/2 cup thinly sliced carrots
  • 1 package (10 oz) frozen Italian-style green beans, thawed
  • 1 cup sliced fresh mushrooms
  • 12 oz American lamb boneless leg or sirloin, thinly sliced into 3-inch strips
  • 1 cup halved cherry tomatoes
  • 4 oz linguine or fettuccine, cooked
  • 2 Tbs. grated Parmesan cheese

Instructions:

In a small bowl, combine broth, wine or water, pesto, cornstarch and oregano. Set aside. Preheat a wok or large skillet over high heat; add oil. Stir-fry carrots and green beans for 4 minutes. Add mushrooms; stir-fry 1 to 2 minutes or until vegetables are crisp tender. Remove vegetables from wok or skillet; set aside.

Add lamb strips to wok or skillet. Stir-fry about 3 minutes or until slightly pink. Add vegetable mixture. Add pesto mixture to skillet. Cook and stir until thickened and bubbly. Stir in tomatoes. Cook 1 minute longer. Serve over hot cooked pasta; sprinkle with Parmesan cheese.

Don't Miss the Lamb Festival In Dixon!

Isn't it time to add a little meat to the plate?

Mark your calendars for The Lamb Festival in Dixon, CA on October 2 and you'll get just that.

A revamped community event, the town is uniting to celebrate the industry that makes Dixon known as "Lambtown, USA." Along with bringing back delicious lamb plates, there will be crafters, wool vendors, art, local celebrity chefs doing demonstrations and sheep dog trials. The festival organizers anticipate doubling the number vendors this year over last year. Berryessa Gap Vineyards will feature all local wine along with special festival margaritas.

"As the local lamb processor, Superior Farms is taking an active role in revitalizing this event and putting Dixon on the festival circuit," said president Ed Jenks. "We want to have people here eating lamb, learning how to cook it, learning how the wool is used, learning how our animals are raised, and having a lot of fun!"

Activities for kids and families include: rock climbing; bouncy houses; mini-cars; miniature trains rides; petting zoo; pony rides; a bungee swing; and lots of other games.

Entries are currently being taken for the lamb cook-off, which has a top prize of $500, and the national lamb eating contest will be here again for a $300 prize. Other competitions include the Sheep-to-Shawl event and Sheep Dog Trials.

There will be two stages for entertainment throughout the day.

Musical guests scheduled include:

  • Bump City (classic rock)
  • Spirit of '29 (Dixieland)
  • Matty T (high energy country western)
  • 48 Straight (classic rock)
  • Suzanne Lorente (vocalist)

Among local groups who will perform are:

  • Ramtown Karate
  • Dixon Dance Studios
  • Pride Gymnastics

"We are planning so many different activities throughout the day, there will be something for everyone," said Dave Scholl, president of the Lamb Festival Board of Directors. "We always have great classes and spinning, and now there will be wine tasting, rock climbing, plus eating local lamb for lunch and dinner!"

The Lamb Festival will be open from 10 a.m. to 9 p.m. on October 2nd at the Dixon May Fairgrounds, 655 S. First Street in Dixon. For more information visit www.lambtown.com or call 707-678-8917.
