Grilled Lamb Kofta with Tahini Vinaigrette

Ingredients

Lamb Kofta

1 lb ground American lamb

1/2 Spanish onion, grated with a zester or box grater

2 cloves garlic, grated with zester or box grater

1/2 tbsp ground cumin

1 tsp ground coriander

1 tsp ground ginger

1/2 tsp cayenne pepper

1 tsp black pepper

1 tbsp chopped parsley

2 tbsp chopped cilantro

1/2 tbsp salt

Vinaigrette

1 cup tahini paste

1/2 cup lemon juice

1 cup water

1 cloves garlic, minced

1/4 tsp ground cumin

1/4 cup red wine vinegar

Directions

Lamb Kofta

1Mix all kofta ingredients together and marinate for a least 2 hours.

2Form the kofta into squares and skewer.

3Grill the kofta till cooked through - about 10 minutes depending on thickness.

Vinaigrette

1Add all ingredients to a blender. Blend on high for 1 minute. Pour into serving dish.
