Shepherd’s Pie

For the homemade Mashed Potatoes

3 Large Potatoes quartered

2 tbsp Butter

1/4 tbsp Salt

1/4 tsp Pepper

1 cup Milk

Meat Filling

1 tbsp Olive oil

1 Large Onion (chopped)

2 lbs Ground American Lamb

1/2 cup Carrot (grated or diced)

1 tbsp Chopped fresh parsley

1 tbsp Salt

1 cloves Garlic, (finely chopped)

1/2 tsp Dried Thyme

2 tbsp Worcestershire sauce

3 tbsp Tomato paste

2 cups Cheddar cheese


1In a large stock pot, bring water to a boil; stir in salt. Add potatoes and boil gently for about 15 to 20 minutes or until they are soft. Drain off water and add butter and salt and pepper. Mash the potatoes, adding enough milk to make a smooth mixture. Set aside.

2Preheat the oven to 350 degrees F. In a large skillet, heat the oil over medium-high heat for 1 minute. Add the onion and stir-fry until tender. Stir in ground lamb; then add carrot, parsley, salt, garlic, and thyme. Cook until lamb is thoroughly browned, stirring frequently. Add Worcestershire sauce and tomato paste- stir well. Spread the meat mixture evenly in the bottom of a deep pie dish.

3Top with mashed potatoes and cheese.

4Bake in preheated oven for 20 minutes covered with foil, remove foil and bake for another 10 minutes.
