0.50 cup Cilantro, finely chopped
1 tbsp Garlic, minced
2 tsp Black pepper
2 tsp Cumin
2 tsp Garam masala
1 tsp Salt
1 tsp Curry powder

0.50 Red onion, quick pickled - thinly sliced tossed in 1/2 cup vinegar or lemon juice
Feta cheese
Tzatziki Sauce
1 Medium cucumber, peeled & small diced
1 cup Whole milk yogurt
Juice of 1/2 a lemon (to taste)
2 tbsp Garlic, minced (or to taste)
0.50 tsp Salt
0.50 tsp Black pepper
Cayenne pepper, to taste
1Soak wooden skewers in water (if using).
2Tear up the bread and pulse in a blender until small pieces. Alternatively chop finely.
3Combine all ingredients and mix with hands thoroughly. Form into kebabs around wooden skewers (if no grill is available meatballs can also be used and cook faster in a pan.)
4Grill until cooked through and little to no pink remains (they will continue cooking once removed for a few minutes).
5Grill flatbreads flipping once until toasted well.
6Cut up kebabs into bite-sized pieces and top flatbreads with tzatziki, kofta meat, cherry tomatoes, arugula, red onions and feta cheese. Finish with fresh black pepper.
