American Lamb Loin Chops Recipe with Mango Salsa
Spice-rubbed lamb loin chops get an extra pop of flavor from an easy salsa made of sweet, fresh mango and fresh mint.

1 tsp ground cumin
1 tsp coarse ground pepper
1 tbsp brown sugar, packed
8 American Lamb loin chops, 1 1/4-inch thick
1 cup chopped ripe mango (1 large mango)
1 tbsp seeded, chopped fresh jalapeño pepper
1 tbsp chopped fresh mint

Remove the lamb chops from the refrigerator 30 minutes before cooking. In a small bowl combine the cumin, pepper, and brown sugar. Rub the mixture on both sides of lamb chops.

In a separate bowl, combine the mango, jalapeño, and mint.

Heat the grill to medium and grill the chops for about 6 minutes on each side or to desired degree of doneness. Remove the chops to a platter and let them rest for at least 5 minutes.

Spoon the mango salsa over the lamb chops and serve.
