Grilled American Lamb Loin Chops with Six Spices
A medley of spices jazz up lamb loin chops in this quick and easy recipe.

4 American Lamb loin chops
1 tbsp whole coriander seeds
1 tbsp fennel seeds
1 tbsp fresh thyme leaves
1.50 tsp black peppercorns
1.50 tsp smoked salt (available in most grocery stores)
1 dried bay leaf

Bring the chops to room temperature at least 30 minutes before grilling.

In a spice grinder (or coffee grinder), grind the coriander, fennel, thyme, peppercorns, salt, and bay leaf until fine. Sprinkle the spice rub over both sides of the lamb chops.

Preheat a grill to medium-high. Grill chops for approximately 4 to 6 minutes per side. For medium-rare, remove the chops from the heat when thermometer registers between 130°F and 135°F (or to desired doneness), being careful not to burn the spice rub.

Rest the chops, lightly covered, for at least 10 minutes before serving.
