Adding grilled lamb to plain pasta makes a lively pasta salad dish that’s great for picnics, family lunches, or a weekday dinner.

0.75 cup fresh lemon juice
0.25 cup extra-virgin olive oil
6 garlic cloves, finely chopped
1.50 tsp salt
1.50 tsp pepper
3 tsp chopped fresh dill
1 lb American Lamb sirloin or leg
0.50 lb rotini pasta
1.50 Roma tomatoes, cut into 1/2-inch pieces
8 low-fat feta cheese, cut into 1/4-inch pieces
0.75 cup Kalamata or black olives, drained and cut in half
0.25 cup finely chopped red onion
1Whisk together the lemon juice, oil, garlic, salt, and pepper in a small bowl. Place the lamb in sealable plastic bag and add 1/4 cup dressing and 1 tablespoon dill. Seal and refrigerate for at least 1 hour or overnight. Reserve the remaining dressing.
2Cook the pasta according to package directions. Drain it and while still warm, toss the pasta with 1/2 cup of the dressing and 1 tablespoon dill; set aside.
3Combine the tomatoes, feta, olives, onion, and remaining dressing and remaining dill. Allow the flavors to blend for 1 hour.
4Toss the pasta and tomato mixture and set aside.
5Preheat a grill the medium-hot. Remove the lamb from the marinade 1 hour before cooking; discard the marinade.
6Grill the lamb for about 10 minutes per side or until desired degree of doneness: 145ºF for medium-rare, 160ºF for medium, and 170ºF for well. Remove the lamb from the grill, lightly cover, and let stand for 10 minutes. (The internal temperature will rise approximately 10 degrees.)
7Thinly slice the lamb and serve it over the pasta salad.
