2 American Lamb Steaks (leg or shoulder)
1 tbsp Oil
Seasoning
0.25 tsp Salt
0.25 tsp Pepper
0.50 tsp Onion powder
1 tsp Mexican oregano
1.40 tsp Cumin
1 tsp Chili powder
0.50 tsp Garlic powder
0.25 tsp Lemon salt
Fries
3 Cooked French Fries, (air-fried, oven cooked, or deep fried)
Toppings
0.50 cup Cheese shredded
Guacamole
Sour cream
Cilantro
Tomatoes
Black and green Olives
Green onions
Chili flakes (optional for spice)
1Season the lamb on both sides with the seasoning mix.
2Preheat a large cast iron or heavy duty pan on medium high heat, add the oil and sear the steak on both sides until golden (3 minutes per sides) or until the temperature reaches 145 degrees F.
3Remove the lamb and let it rest for at least 3 mins*.
5In the meantime, preheat the oven to broil and gather your toppings.
6Cut the lamb into 1-inch chunks.
7Using the same heavy-duty skillet, start layering the fries, cheese and cut up pieces of lamb.
8Broil the pan until the cheese has melted and then your carne asada fries are ready for loading.

10*Note: The USDA recommends that lamb reach an internal temperature of at least 145 degrees F with a 3-minute rest.
